Good Eatin' -- Vegetables w/ Peanut Sauce Recipe
Good day to All!
Here is a recipe straight from my garden. It is a true 'Jamerican' variation on traditonal Indian cuisine. Although Bok Choy is listed in the recipe, I prepared it with Swiss Chard last week (stems and all) and it was just as tasty!
Happy Eating!
Vegetable 'Satay'
Vegetables
*Onions cut into rows
*Garlic, finely chopped
*Ginger, finely chopped
*Carrots cut into matchstick
*Cabbage cut into rows
*Bok-choy cut into rows
*Fennel cut into thin rows
*1 Tomato, thin wedges
*Arugula, torn to small-medium pieces
*Basil Leaves, sliced into thin strips
Seasoning
+Sesame Oil
+Olive Oil
+Fresh Pepper
+Star Anise, crushed
+Dash Paprika
+Pinch of Nutmeg
+Dash Cumin
+Dash Curry Powder
Peanut Sauce
-Coconut Milk
-Peanut Butter
-Brown Sugar
-Braggs Amino Acids
-Rice Vinegar
-Wedge of Lime
Cooking directions:
1. Quick steam or blanche fennel and bok choy in wok for 3 minutes and remove
(low water already brought to boil)
2. Keep wok on a medium to low flame:
a. Add oils and garlic, then cabbage.
b. Season, then add carrots
c. Add onions and stir until softened;
d. Return fennel and bok choy to the wok
e. Season again to taste
3. Whisk or Mix vinegar, braggs, peanut butter and garlic in coconut milk.
4. Turn dow to a low flame:
a. Add mixture to wok and turn
b. Add arugula, basil and tomatoes to wok;
c. Turn off flame, then turn again
5. Let it sit for 10 minutes to allow the sauce to blend and thicken.
6. Serve with wedge of lime or squeeze when it is on the plate.
Tidbits:
***Can be served hot or cold.
***Serve with Jasmine or Basmati Rice and wedge of lime
***Can also serve with a side of chicken
***You can use prepared Satay sauce, but it doesn't guarantee flavor or thickness
Prep time: 30 minutes with all ingredients
Cooking time: 10 minutes

Biography
Dr. Paul Goss, founder and president of New Body Products, was the eighth child of ten born to Sam and Annie Goss in Canton, Georgia. He was raised in a company town called Alcoa, Tennessee.
He received the basis for an international education not in the poorly funded segregated school, but from two African Elders. Doc Mitchell, the Root Doctor and Ms. Bellamy, the Herb Lady. They were root workers, one who knew the value of herbs and how to apply them. Influenced by his teachers, Dr. Goss became an organic chemist for a large company after attending Stillman College in Alabama.
By 1965, he developed an impressive client base as he shared his self-taught knowledge of herbs and holistic healing. In 1976, he established NEW BODY PRODUCTS, maker of C.K.L.S, in Compton, California.
Using iridology for a diagnosis along with herbal remedies and vegetarian diets, Dr. Goss has helped people achieve the New Body they wanted through his unique application of ancient holistic healing.
Dr. Goss has lectured on holistic topics throughout the United States and abroad. He has written three books, Forever Young, The Natural Way, and The Rebirth of Gods. He is the key developer of Eden,, a holistic health resort in Arizona.
Today, NEW BODY PRODUCTS are distributed by hundreds of experienced holistic practioners as well as lay people throughout eighteen countries-- the U.S., the Caribbean, as well as Africa and Europe.

Food Revolution with Jamie Oliver
Have you seen the Food Revolution? This is not your average television. If you click on the title above, it will bring you to an earlier episode where Jamie Oliver (the host) wants to enter the cafeterias of the LA school system. Just see what unfolds...
We have a real crisis going on with regards to children's health, and it really motivates me to know that people are making more conscious decisions about their bodies and their diet. However, it is of equal or greater benefit to ensure that we connect with and share these ideas and principles with the youth--our children and our future.
If I could offer two simple things with regard to youth and their diet, it would be:
1. Add Water. On average, most young people do not drink enough water daily - regardless of the amount. They are active and already burn it off much faster than adults.
2. Add Fruit. How simple, yet how important. It really doesn't matter which you choose... as a matter of fact, let your young one choose for themselves. As long as they're not allergic, I bet you they'll eat it! Just make sure it's out and available for them.
*You can also add fruit by creating smoothies
Whatever your lifestyle, may it lead you to Peace, Hapi-ness and Wellness!
